3 Ingredient Key Lime Pie!

(My finished 3 ingredient Key lime pie. Forgive my crazy whip cream job though! I couldn’t find an icing bag, so I went the “ghetto” route and used a Ziploc bag with the corner cut off! Hey, save your judgment! It worked! lol.)

I recently made the above Key Lime pie, and I was just floored when I discovered how simple it is to make!! It came out wonderfully, and took virtually no time at all. PLUS- it produced only one dirty bowl to wash, so it was a successful recipe on many levels in my opinion! I had to pass this quick and easy recipe on to you all, it’s the perfect summer dessert.

3 Ingredient Key Lime Pie!

All you need is:

1- 14 oz. jar of sweetened condensed milk
3- egg yolks
1/2 cup key lime juice (I use a smidgen more, because I like things a bit tart)

(Optional: Graham cracker pie crust, whip cream, lime wedges)

Combine milk, juice and egg yolks. Blend until smooth. Pour filling into your choice of pie crust, or ramekin dishes. I used a store bought graham cracker crust. Bake at 350 degrees, for 15 minutes. Allow to stand for 10 minutes before refrigerating. For extra yum factor, top with fresh whip cream or cool whip just before serving. Add Lime wedges or zest to decorate.

Happy Baking!

Nikki- You will like this version I think. It's really smooth, and sets well. I think the key is to make sure not to use whole eggs- just yolks. And also, to use a good key lime juice. I used one called "Nellie & Joe's famous Key West lime juice"- it was great!

Having sampled this more than once, I can definitely vouch it's YUMMO. Two forks up! And given it has the dairy, fruit and grain boxes on the food pyramid covered, it's practically health food! ;)
