Triple Lemon Fairy cakes!
These cupcakes are based on an older Irish recipe I found. I changed quite a bit of it, including using box mix! It turned out tangy and lemony sweet though! Plus, it’s WAY faster and easier to make than the original “from scratch” version.
Thought I’d pass it on! Happy Baking:)

3 Ingredient Key Lime Pie!
(My finished 3 ingredient Key lime pie. Forgive my crazy whip cream job though! I couldn’t find an icing bag, so I went the “ghetto” route and used a Ziploc bag with the corner cut off! Hey, save your judgment! It worked! lol.)
I recently made the above Key Lime pie, and I was just...

Quick Mole Sauce: Chocolate comes to dinner!
My husband has a favorite dish when we get Mexican food- he loves chicken with Mexican mole sauce on it!
The first time he got it when we were dating I tasted some- and was surprised when he told me that mole has chocolate in it! I’ve always wanted to make him mole sauce at home, but it sounded...

Using up leftovers from the weekend…
This weekend Michael and I got some Chinese takeout. Michael never eats the white rice that comes with his meal, because white rice isn’t that healthy- and he doesn’t want to fill up on it. It was sitting in our fridge today, when I decided to use it to make our own special “fried rice.”
It...

Unplugged update & new favorite Recipe.
First of all my experiment with “unplugged Friday” was for the most part successful. I didn’t use the internet, or the computer at all that day. But I also didn’t get a whole lot done, because as it turned out- the whole family got sick!
Michael had to go to the doctors office...

We’ve already started celebrating St. Patrick’s Day!
We had Irish soda bread this afternoon with some tea-as has been a tradition for me since I was a little girl. Irish soda bread has always been a favorite of my fathers, and as such my mom usually had it around on St. Patrick’s Day!
I also made some beef stew with Guinness! We sampled some already-...

The BEST baby food ever!
Michael and I are trying really hard to give Molly only organic food. And I’ve been making fruit, and veg into baby food for her. So far I’ve steamed and pureed butternut squash, green peas, zucchini, carrots, avocado, apples and now PLUMS!
This puree was the best so far. The plums made...
